Orange rice pudding

The British answer to risotto – sweet, sticky, creamy and delicious!

  • 1 vanilla pod
  • 75g pudding rice
  • 600ml organic whole milk
  • 2 knobs of unsalted butter
  • 50g caster sugar
  • 1 wide strip of orange zest, plus some finely grated zest
  • Seville orange marmalade

Score down the length of the vanilla pod and scrape out the seeds from inside. Place the rice, milk, butter, sugar, orange zest, vanilla seeds and vanilla pod in your Survival Kit wok and place on a medium heat. Heat until nearly boiling, then reduce the heat to a simmer.

Cover with the glass lid and cook gently, stirring every now and then, until the rice is tender and has absorbed all the liquid. This takes about 45 minutes.

Take the pan off the heat and remove the vanilla pod and the strip of orange zest.  Serve the rice pudding with a big dollop of marmalade some orange zest sprinkled over the top.
