If you’ve never made a carrot cake before, give this recipe a go – you’ll be surprised how easy and delicious it is.

  • 400g digestive biscuits
  • 200g pecan nuts, roughly chopped
  • 200g pistachio nuts
  • 50g glacé cherries, roughly chopped
  • 50g dried apricots, roughly chopped
  • 300g butter
  • 2 tablespoons golden syrup
  • 2 tablespoons caster sugar
  • 400g good-quality plain chocolate
  • 3 tablespoons cocoa powder

Line the Survival Kit frying pan with greaseproof paper (without the handle attached). Break the biscuits into small pieces directly into a large bowl. Add the nuts, cherries and apricots.

Bring some water to a simmer in the smallest pan of your Survival Kit. Put the butter, syrup, sugar and chocolate into a heatproof bowl and place over simmering water until the chocolate has melted. Stir together.

Mix the contents of both bowls together and spoon the mixture into the lined frying pan. Press the mixture down, cover with clingfilm and chill in the fridge to firm up for at least 2 hours.

Once chilled, turn out on to a plate or board, dust with sifted cocoa powder and serve in pieces. Store in a sealed container – it’ll taste even better after a couple of days!
